Sun-Dried Tomato and Artichoke Penne
Here's a savory lunch lover’s dream for on-the-go eating. This recipe combines the delicious taste of garlic with the creaminess of avocado and artichokes all over a healthy bed of Chickapea noodles. The dressing couldn’t be easier with only requires a few simple steps to prepare and capers add the perfect touch of salt to really make all the flavors pop. This meal is gluten-free, nut-free, soy-free and vegan.
Sun-Dried Tomato and Artichoke Penne

Ingredients:
- 1 Package Chickapea Penne
- 1 Tbsp salt
- ¼ cup sun-dried tomatoes, sliced, packed in oil but drained
- ¼ cup marinated artichokes, sliced
- 1 avocado, diced
- 1 Tbsp red onion, minced
- 1 Tbsp green onion, diced
Dressing Ingredients:
- 3 Tbsp plain tahini
- 1 Tbsp olive oil
- 1tsp prepared yellow mustard
- 1lemon, juice of
- 3 tsp capers, minced
- 3-4 cloves fresh garlic, minced
- Pinch of pepper
- Pinch of sea salt
Dressing Instructions:
- In a resealable jar mix all dressing ingredients.
- Shake well, seal and store in the fridge until ready to use.
Instructions:
- Prepare Chickapea penne to package specifications, (heat 16 cups of water in a large pot over high heat until boiling. Add pasta and 1 Tbsp of salt to the water, decrease heat to maintain a gentle boil. Stir and cook pasta for 7 minutes).
- Drain pasta and rinse with cool water.
- In a medium bowl, mix pasta with sun-dried tomatoes, artichokes, avocado, red onion and green onion.
- Remove the jar of dressing from the fridge.
- Shake dressing and pour desired amount over the pasta mixture.
- Combine well and serve at room temperature.

Recipe Notes:
- Capers are an essential ingredient in the dressing and cannot be substituted.
- The dressing can be made in advance and stored in the refrigerator for a few days prior to serving.
- Optional: serve the entire recipe over a bed of fresh lettuce to incorporate more greens into your day.
