Italian "Sausage" Penne Skillet
A vegan, gluten-free and nut-free meal that is both hearty and big on flavor. Delicious Chickapea penne pasta combined with vegan Italian sausage, roasted tomatoes, onion, peppers, and vegan cheese for a healthy and comforting meal. It is sure to become a simple weeknight favorite in your house.
Italian Sausage Penne Skillet

Ingredients:
- 1 package of Chickapea Penne
- 2 Tbsp salt, for boiling pasta
- 1 Tbsp avocado oil
- 5 large tomatoes, each sliced into 8 pieces
- 1 Tbsp avocado oil
- ¼ tsp salt
- 2 Tbsp avocado oil
- 1 yellow onion, sliced
- 1 yellow pepper, sliced
- ¼ cup red onion, thinly sliced
- ½ package of Big Mountain Foods, Mama Mia veggie links, sliced into bite sized pieces
- ¼ cup vegan cream cheese
- 1 tsp Italian seasoning
- Flaked sea salt to taste
Instructions:
- Preheat oven to 425°F
- Toss the sliced tomatoes in 1 Tbsp of avocado oil, ¼ tsp salt and 1 Tbsp Italian seasoning
- On a lined baking tray, roast the sliced tomatoes for 30 minutes
- In a large skillet fry yellow onion and yellow pepper with 2 Tbsp of avocado oil over medium-low heat
- Fry the mixture until the onion is soft and browning
- Add the Mama Mia veggie links to the skillet and heat until warmed through, tossing the mixture regularly
- Meanwhile, prepare the Chickapea Penne to package specifications (heat 16 cups of water and 2 Tbsp of salt in a large pot over high heat until boiling. Add pasta to the water, decrease the heat to maintain a gentle boil. Stir and cook the pasta for 7 minutes)
- Dain the pasta and rinse with warm water
- Add the cooked pasta to the skillet and mix it well into the onion, pepper and Mama Mia sausage
- Top the skillet with the cook tomatoes, red onion, vegan cream cheese and Italian seasoning
- Place the skillet in the oven at 425°F until the cheese begins to melt, roughly 5 minutes
- Sprinkle the dish with finishing salt to taste and serve warm

Recipe Notes:
- Big Mountain Foods, Mama Mia veggie links were used in this recipe, but can be substituted for any savory veggie links
- Tofutti vegan cream cheese was used in this recipe
- This recipe is best when served warm
- Keep leftovers covered in the refrigerator
- The skillet can be reheated by placing it in a 300°F oven until warmed through
