If you want to make a perfect summer salad, you have to go with this one. This Bruschetta Pasta Salad is HEALTHY, EASY TO MAKE, and SO YUMMY! I make it twice a week during summer months and my whole family loves it.
I’m a huge fan of bruschetta. It’s flavorful and fresh and it’s one of those recipes where I always seem to have the ingredients on hand. The best part is that it takes less than 20 minutes to make.
This salad could also be customized to your liking. You can add some fresh mozzarella, grated Parmesan cheese, or diced onions. Let’s take a moment to discuss two of the ingredients.
Tomatoes
Because is it one of the main ingredients, you’ll want to use great quality tomatoes. Heirlooms are the best, but if you cannot get them, try to find some tomatoes from the farmer’s market. They are in season now, so I am sure you won’t have any trouble finding fresh and tasty tomatoes.
Pasta

- 8 ounces Chickapea Pasta shells
- 5 medium tomatoes, diced
- 2 large garlic cloves, chopped
- 1/4 cup chopped basil
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- balsamic reduction to garnish (optional)

Cook Chickapea pasta according to the package directions, rinse with cold water immediately, and set aside.

Place the pasta and the rest of the ingredients into a large bowl and mix well.

Garnish with balsamic reduction if desired.
