Pineapple and Veggie Ground Penne

Pineapple and Veggie Ground Penne

  • 1 Package Chickapea Penne
  • 1 Tbsp salt
  • 1 can (398 mL) pineapple chunks, drained
  • 1 package (350 g - 400 g) gluten-free veggie ground
  • 1 jar prepared tomato-based pasta sauce


  1. Prepare Chickapea penne to package specifications. (Heat 16 cups of water in a large pot over high heat until boiling. Add pasta and 1 Tbsp of salt to the water, decrease heat to maintain a gentle boil. Stir and cook pasta for 7 minutes.)
  2. Drain pasta and rinse with warm water.
  3. Meanwhile, if applicable, break the veggie ground apart using a wooden spoon in a large pan over medium heat.
  4. Add one jar of pasta sauce to the veggie ground and mix well.
  5. Heat the mixture over medium heat until hot.
  6. Add the penne to the pan and toss well to incorporate into the sauce.
  7. Plate each portion and top with the pineapple chunks as desired.
  8. Optional, sprinkle finishing salt and /or Italian seasoning over each portion.
  9. Enjoy!

  • Veggie ground is available under a variety of names and is available in most stores in either the refrigerated or frozen sections. It may be listed under names such as beefless ground, ground round, Italian veggie crumble etc.
  • Roasted garlic pasta sauce was used in this recipe.
  • This recipe can be doubled with good success.
