Roasted Garlic and Lemon Linguine


Warm, toasty cloves of caramelized garlic over nourishing Chickapea Linguine pasta make an incredibly simple recipe that focuses on the rich taste of creamy roasted garlic. The sweetness of the garlic will bring a depth to the sauce and leave your home feeling cozy and smelling amazing. This recipe is vegan and gluten-free, making it a great choice for sharing with friends or taking on-the-go.


Roasted Garlic and Lemon Linguine

Roasted Garlic Sauce Ingredients:

  • 4-6 bulbs of garlic,
  • 2 Tbsp avocado oil
  • ¼ tsp salt
  • 1 Tbsp balsamic vinegar
  • Juice of 1 lemon
  • ½ tsp sea salt

Pasta Ingredients:

  • 1 package of Chickapea Linguine pasta
  • 2 Tbsp salt
  • ¼ cup starch water, reserved from cooking the pasta
  • Remaining roasted garlic cloves, to taste
  • Roasted garlic sauce
  • Lemon zest, to taste
  • Finishing salt, to taste

Roasted Garlic Sauce Instructions:

  1. Preheat the oven to 425°F 
  2. Prepare the bulbs of garlic by cutting the top off each bulb, roughly a ¼ inch on each bulb
  3. Set the bulbs cut side up, in the middle of a large piece of aluminum foil
  4. Drizzle each bulb with a couple teaspoons of avocado oil and a pinch of salt
  5. Close the aluminum foil in a tight packet around the garlic bulbs
  6. Bake the garlic for 40 minutes or until the cloves feel soft when pressed 
  7. Allow the garlic to cool then peel each clove 
  8. Add 2-3 blubs worth of cloves to a small blender
  9. Add balsamic vinegar, lemon juice and sea salt to the blender 
  10. Puree until a sauce consistency is reached

Pasta Instructions:

  1. Prepare the Chickapea Linguine to package specifications (heat 16 cups of water and 2 Tbsp of salt in a large pot over high heat until boiling. Add pasta to the water, decrease the heat to maintain a gentle boil. Stir and cook the pasta for 6-7 minutes)
  2. Reserve ¼ cup starch water once the pasta is cooked
  3. Drain the pasta and rinse with warm water 
  4. Return the pasta to the pot
  5. Pour in the starch water, stating with 2 Tbsp and adding more only if the pasta is still dry
  6. Add the Roasted garlic sauce to the pasta and mix well
  7. Mix the remaining cloves of garlic into the pasta, to taste
  8. Top with lemon zest and finishing salt
  9. Enjoy

  • This recipe is incredibly simple, using high quality ingredients will yield the best results
  • Fresh lemon is required for this recipe
  • Much of the finishing of this recipe depends on personal taste and therefore ranges of ingredient amounts were given
  • This recipe should be served warm 
  • Unused roasted garlic cloves can be used as a spread or mashed and served alongside a variety of other meals
