Garlic Chili Oil Noodles

An incredibly flavorful Chinese inspired meal that can be ready in under 20 minutes. This aromatic dish was inspired by You Po Mian, a Chinese dish made with hot oil poured over wheat noodles. This version uses savory Chickapea Greens+ Spirals and a spicy garlic oil for a meal that is both gluten-free and vegan.
Garlic Chili Oil Noodles (You Po Mian)

Ingredients:
- 1 Package Chickapea Greens+ Spirals
- 2 Tbsp salt, (for cooking pasta)
- 1/3 cup avocado oil
- ¼ cup green onion, chopped
- 3-4 cloves of garlic, minced
- 2 tsp fresh ginger, minced
- 1-3 Tbsp chili flakes
- 1 ½ tsp vegetable stock powder
- 3 tsp tamari
- 1 tsp rice wine vinegar
- ¼ cilantro
- 1 Tbsp sesame seeds
Instructions:
- Prepare the Chickapea Greens+ Spirals to package specifications, (heat 16 cups of water and 2 Tbsp of salt in a large pot over high heat until boiling. Add pasta to the water, decrease heat to maintain a gentle boil. Stir and cook pasta for 7 minutes)
- Drain the noodles and rinse them with warm water
- Place the cooked noodles into a medium sized, heat safe bowl
- Cover the noodles with the green onion, garlic, ginger chili flakes, vegetable stock powder, tamari and rice wine vinegar
- Meanwhile, heat the avocado oil in a small pan over medium heat until very hot
- When the oil is very hot, pour it over the noodle mixture
- Mix the ingredients together quickly to ensure the oil cooks the garlic and chili flakes
- Portion your noodles onto the serving plates and top each helping with a generous amount of cilantro and sesame seeds to taste

- For less or more spice adjust the amount of chili flakes to taste
- The flavors of this dish intensify the longer it sits
- This recipe can be made ahead and stored in the refrigerator
